Pizza!! And some seriously amazing food..

So I stumbled across a mini pizza recipe this week, and lets just say it is nothing short of simple and amazing!

Just take some refrigerated biscuits, and put them on a greased baking sheet.  I then put some pasta sauce (small can) on the biscuits, followed by some canned mushrooms, and shredded/skim mozzarella cheese.  I baked these bad boys for about 14 minutes, and then topped them with fresh basil.  Wow.  I had this for lunch ever day this week.  Crazy I know, but I am glad I just got my fresh picks order in, so now I can seriously change up the menu!


I love this food.


This is my current Fresh Picks order of the week.  Oh. My. Goodness. Look at this stuff!  I received the following in my order: 2 bananas, 1 pound of red onions (for chili this weekend..Sunday Funday!), 1 pound of apples, locally made organic pasta sauce, Bagel from Red Hen Bakery, 2 pounds of Yukon Gold Potatoes,Pie for a pumpkin pie, Green peppers, Saute mix, Scarlet turnips, cilantro, roasting peppers, and carrots. 
I saw a crazy amount of leaves and greenery in the bag when I opened it.  I have never actually seen turnips and carrots with the stem still on them!  It was a pleasant surprise, and I can't wait to use these recipes this weekend to make some great food!

More Food...

The other day I made some Santa Fe Breakfast Wraps for breakfast..and Chicken Marsala for dinner.  It was amazing!

Santa Fe Wrap was really easy,and I made enough of the chopped up veggies to last for 3 recipes.  I could never get sick of this for breakfast!

Ingredients:
1 tsp oil
1/2 cup of chopped red bell peppers
1/2 cup of chopped scallions
garlic ( i usually use prepared garlic)
1/4 tsp of chili powder
1 large egg (to scramble)
1 low carb, whole wheat tortilla
I heated up some oil and sauteed some chopped bell peppers, scallions and garlic to the pan.  I added chili powder and some salt and pepper to the pan.  I scrambled one egg in another pan and put both the egg and veggies on a low-carb whole wheat tortilla.  I added some cheddar to change it up a bit.  It was great with the strawberries and some OJ!

Chicken Marsala is one of my favorite recipes to make.
1 Chicken Breast
Flour, Salt, Pepper to coat
1 tsp Olive Oil
1/4 cup Chicken Broth
1/4 cup Marsala Wine
1 tsp corn starch
1 tsp thyme
1 tsp fresh lemon juice
1 tsp garlic powder
1/3 cup of mushrooms
1/3 cup of scallions
Butter to sautee mushrooms and scallions
Farafalle or Egg Noodle pasta

  I first flattened a chicken breast with a meat mallet, and then cut up the breast.  I coated the chicken with flour, salt and pepper.  I then heated up a skillet with olive oil and cooked the chicken in the skillet.  I then added some chicken broth, Marsala wine, cornstarch, thyme, lemon juice, salt, and garlic powder to a bowl.  I sauteed some mushrooms and scallions in butter,and added the contents of the bowl to the sauteed veggies.  After the sauce is thick, put it over the noodles and chicken.  Amazing!

This is why I love Thursdays..

Every Thursday I get fresh produce delivered to me from a local company.  This is their site http://www.freshpicks.com/  I usually order a single veggie box, but this week I ordered a single veggie and a single fruit box.  It is an insane amount of food!


I received two tomatoes, green beans, 3 ears of sweet corn, carnival squash, yellow onions, arugula, thyme, cucumbers, basil, watermelon, seedless grapes, peaches, and gala apples.















Since I have been watching a lot of Food Network lately, I decided that I should make something for dinner wtih all this amazing food.  Luckily for me, Giada was on this morning, so I made this recipe Turkey Milanese.  I substituted chicken for turkey, and added fresh thyme to the breadcrumbs.  It was amazing!

Welcome to my new blog.  Thought I would write down my adventures, share my recipes, and post my photos from all my trips.  This is my last year in Chicago, and I am ready to enjoy every minute of it!
