The Weekend in Review..

To sum up this past weekend:

  • Chicken Hut.  Got to eat.  Yum.
  • New Wardrobe @ the Gap  Can't say no to new clothes.  Especially when they are 40+% off.
  • Sleep, lots of sleep.  Work was crazy this past week.  Vacation is on the horizon.  Literally. 
  • Chicago Cares project, cooked breakfast for Seniors.  Had an 80 y/o man flirt with me.  Had to shut him down.  Nicely, of course:)
  • Trader Joes needed some yuppie snacks and wine.  Can always use more wine.  Oh, and flowers.
  • Sushi, Wine, and Drinks
  • Laundry.  My apt was a hot mess. 
  • Organizing. Been keeping an updated binder for all my magazine articles.  Everything from reviews of products, to recipes, to work out routines. 
  • Dog walking.  Spending quality time with my girl. 
  • Pride.  Had a few drinks @ Bridgets, and enjoyed the revelry.

Been Busy

I feel like the past two weeks have been a blur...

My guy has been on vacation for a few weeks, so we have been spending a lot of time together.  I move in a month, so that has made it more and less chaotic at the same time.  I need to buckle down, and start purging, getting stuff together for my move.  The only saving grace of my moves, is that the movers also pack my stuff.  The downside, is that it is a split move, so I have to decide what goes to RI, and what stays in storage.  Yikes! 

Time to start making lists, and figuring out what I am doing until I leave.  I have one trip planned to move my puppy somewhere she can go while I live in the barracks.  I am going to miss her:( 

Frozen Peanut Butter Pie

In true Megan fashion, I made Mike some of his favorites for his birthday a few weeks ago.  One of the recipes that I made was a frozen peanut butter pie.  It is so easy to make, and my SIL taught me how to make this a few years ago.

Ingredients:
  • 1 1/2 cups powdered sugar
  • 1 cup creamy peanut butter
  • 1 8-ounce package cream cheese, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 container chilled whipping cream (Cool Whip)
  • 1 purchased  chocolate, Oreo, or graham cracker  pie crust
Blend powdered sugar, peanut butter, cream cheese and vanilla in stand mixer until smooth, occasionally scraping down sides of work bowl.  Fold whipping cream into peanut butter mixture in 2 additions. Spoon peanut butter filling into crust and smooth top. Freeze pie until filling is firm, at least 3-4 hours.  Add chocolate syrup or chocolate chips for the chocolate lovers, or just add it when you serve! (Can be prepared 1 week ahead. Cover and keep frozen. Let stand room temperature 20 minutes before serving to ease with slicing.)

I make this with my Kitchen Aid stand mixer, and it takes me 15 minutes tops.  The hardest part is waiting for it to solidify so you can eat it.  :)

Rant...

Today, while I was driving home, I almost got rear ended by a guy in an SUV who was texting while driving.  This is such a huge pet peeve of mine.  Huge.  If you had someone you knew drive behind you, in front of you, etc while you were texting while driving, you would get some feedback you probably didn't want to hear.  This guy was speeding up, slowing down, braking hard each time.  I have no idea why he was texting on the expressway..

Summer Traditions...

1. Festivals.  We all know I love St. Mike's Fest, and all of the other festivals.  Can we say Sausage Fest this weekend?

2 More Months...

I realized today that I only have 2 more months here at my job.  Wow!  Time is flying, and I have to get my act together.  I should have my move scheduled today, and I will start my packing lists.  Moving is such a pain in the butt!  I am excited for my next step, but sad to leave the people I love back here in Chicago.  I had the best Memorial Day weekend (will write about it soon, I promise!), and I want more weekends like that:)  This weekend should be a close second, since I get to celebrate my guy's 35th bday. 

I am going to miss this place, and definitely need to finish up my "bucket list".  I have been doing quite well on it, and making the most of every day.  Now I need to hunker down, and pack, because I will be living out of a suitcase/car for over a year.  What a thought.  Anyone ever do this and have any ideas? Suggestions?  I am glad I am good at the 30 in 30, because I won't be able to have a lot of clothes, and will definitely be making a few trips to Goodwill.
