When I hosted a brunch earlier this month, I used the following menu.  Recipes, etc included!

Delicious Breakfast Casserole
Potato Casserole
Sweet Fruit Pizzas
Pumpkin Spice Muffins

Mimosa Bar (different juices like OJ, Peach, etc)
Bloody Mary Bar (different olives, etc)
